OMG! Sambal® Peanut Sauce
340g or 1 cup roasted peanuts (blitz in food processor till coarse)
500 ml or 2 cups water
5 Tbsp Sugar
3/4 Tbsp Salt
3 garlic cloves
1/2 Tbsp shrimp paste (optional)
1 Tbsp OMG! Sambal® (You can use more if you like it spicier)
2 Tbsp neutral flavored oil (avocado/ canola)
3-5 Tbsp white vinegar (amount is dependent on your taste preference)
1 - Place all of Part A into a medium size pot and set it to boil gently. Stir occasionally, this is important as the peanuts will settle to the bottom and if you don’t stir it will burn.
2 - Blitz Part B in a food processor until finely chopped. Transfer everything into a small pan and sauté until the shallots are soft and everything becomes a jam-like consistency, then add everything into the pot of gently simmering peanuts.
3 - Add the vinegar, start with 3 tbsp first. Taste and add more if you like.
4 - Remove from heat, and Voila! — you have yummy peanut dressing just in time for summer salads.
5 - This can keep up to a week in the fridge.
