Every year, Mom would wait for Kumquats to be available and for a short while, we would have delicious better than any marmalade citrus jam to eat with our bread. This year, I kept asking my grocer when I could get my hands on organic kumquats because I didn't want to miss the season for this deliciously fragrant fruit. If you've had fresh kumquats, you would know the delights of the burst of sweet-bitter-acidity when you pop one into your mouth to eat.
I adapted Mom's recipe and combined it with a traditional French style told to me by a friend's mom. Each jar is chockfull of fruit and I'm hoarding mine and hoping it lasts until the season comes again next year.
