AF Chili Chunka Samba: Easy AF Pickle
As we head into summer a refreshing accompaniment to grilled food and a staple on our table are pickles. This quick pickle recipe is surprisingly easy, packs a lot of flavor and will quickly become a summer staple for you too. Our standard always has cucumbers in it but with vegetables coming into season, you can mix and match. Try it with: radishes, turnips, pears, jicama, the combination is endless!
It’s powered by AF Chili Chunka’s tangy garlicky heat.
1 small Cucumber, sliced into coins
1 small Apple, peeled, cored, quartered and sliced thinly
1 small Carrot, peeled and grated
1 Scallion, chopped
1 tbsp Sibeiho AF Chili Chunka
2 tbsp Rice Vinegar
1 tbsp dark brown sugar (optional)
Salt to taste
1. Prepare all your produce and set aside.
2. In a medium sized bowl, add in your Sibeiho AF Chili Chunka Sambal, sugar and rice vinegar. Add in your vegetables (and/or fruit) and mix thoroughly.
3. Taste to check for seasoning. Season with salt, or add more Sambal or vinegar as needed and adjust to your taste. Mix thoroughly.
Notes: You can enjoy this immediately or let it marinate overnight for the marinade to penetrate even more. The texture of the fruit and vegetables will change the longer it marinates. We love it at all stages of the process.
