MOF Sambal by Sibeiho is a vibrant Singaporean-inspired sambal chili sauce made in small batches in Portland, Oregon. Inspired by Sambal Hijau — a classic Southeast Asian green chili condiment — this sauce delivers bright acidity, layered heat, and deep savory flavor.

What makes MOF Sambal unique is its Pacific Northwest twist. Instead of the traditional green tomatoes used in Southeast Asia, we use fresh tomatillos, giving the sauce a lively tartness that perfectly balances the warmth of chili peppers and garlic. The result is a bold vegan chili sauce that adds instant flavor to almost anything you cook.

What Is Sambal?

Sambal is a staple Southeast Asian chili sauce known for its spicy, tangy, and umami-rich flavor, widely used in Singaporean and Indonesian cooking to add depth and brightness to everyday meals.

MOF Sambal was inspired by Sambal Hijau, traditionally served alongside Ayam Penyet or Ikan Penyet — deep-fried turmeric chicken or fish eaten with white jasmine rice. The dish originated in Indonesia and became a beloved fixture in Singapore's hawker culture. Like all great sambals, MOF cuts through rich foods and wakes up your palate.

Summer Favorite: Peach Sambal Salad

Toss together ripe peaches (or fresh tomatoes), 1 tbsp MOF Sambal, 1 tbsp balsamic vinegar, and 1 tbsp extra virgin olive oil. Finish with a sprinkle of furikake for crunch and umami. Sweet, tangy, spicy, and incredibly refreshing.
