Sourdough Tomato Toast with Manchego & Sambal
Last Tomato Standing:
Sourdough Toast with Manchego & Sambal
Aka the Sink Tomato Toast · Sweet-heat · Ready in 5 minutes.
Sourdough tomato toast with sambal mayo, shaved Manchego and flaky sea salt.
Adieu, tomatoes of 2026. We're reluctantly eating up the last of the harvest, and this toast is the best way to say goodbye.
This sourdough tomato toast starts with a crisp slice of bread spread with OMG! Sambal and good mayonnaise, then gets layered with salty shaved Manchego and juicy sliced tomatoes. A few dollops of extra MOF Sambal and a pinch of flaky sea salt finish it off. It's creamy, spicy, tangy and fresh, all in one bite.
Our heirloom lineup this year had some wonderfully whimsical names: Summer of Love, Clint Eastwood and Black Beauty, among others. Use whichever tomatoes you have the fewest of. That's the "last tomato standing" rule, and it makes every toast a little different.
Why "Sink Tomato Toast"? Because you'll want to eat it standing over the sink, naturally. The tomato juices run, the sambal drips, and it's worth every napkin.
Why You'll Love This Tomato Toast with Manchego and Sambal
Ready in minutes. Toast, spread, layer, finish. No cooking beyond the toaster.
Only a few ingredients. Sourdough, mayo, sambal, Manchego, tomatoes and salt. That's the whole list.
Sweet, salty and spicy. Ripe tomatoes and nutty Manchego balance the chili kick of sambal.
Any tomato works. Heirloom, cherry or a mix of whatever is left in the garden or on the counter.
Perfect for
The last of the harvest tomatoes, and the sambal-mayo base with shaved Manchego.
What you need
A good sourdough loaf with a sturdy crumb that can handle juicy tomatoes, plus a toaster or a hot pan.
A cheese peeler or sharp knife for shaving the Manchego into thin curls, and a napkin. You'll need the napkin.
Tip: make as many slices as you have tomatoes to use up. Assemble each one right before eating.

What to Serve with Sourdough Tomato Toast
This toast is a meal on its own for a quick breakfast or lunch. For something more filling, pair it with a soft-boiled or fried egg, a simple green salad, or a bowl of soup. A cold glass of something crisp never hurts either.
Best Tomatoes for Tomato Toast
Ripe heirloom tomatoes are ideal. Their rich flavor and varied colors make the toast shine. Varieties like Summer of Love, Clint Eastwood and Black Beauty all work beautifully, but any in-season tomato will do. Cherry tomatoes can be halved or sliced thin, and a mix of varieties adds color and flavor contrast.
Frequently Asked Questions
What kind of tomatoes should I use?
Use whatever you have. Heirloom tomatoes are especially good, and using up the varieties you have the fewest of is the whole spirit of this recipe.
What is Manchego cheese?
Manchego is a Spanish sheep's milk cheese with a nutty, slightly tangy flavor. It shaves into thin, elegant curls that melt into the sambal mayo.
Can I swap the Manchego?
Yes. Any firm, salty cheese that shaves well, such as Parmesan or Pecorino, makes a good substitute.
Can I make this ahead of time?
This toast is best assembled right before eating so the bread stays crisp. You can shave the cheese and slice the tomatoes shortly beforehand to speed things up.
How spicy is it?
A teaspoon of sambal in the spread plus a few dollops on top gives a warm, medium heat that the mayo, cheese and tomatoes balance out. Use less for a milder toast, or dollop more if you like it fiery.
