Oregon continues to inspire our cooking adventures here. In Singapore, there’s a Cashew Nut Cookie that we love to eat made by our aunt during Chinese New Year. Its not too sweet and there’s a nice crumbly, melt-in-the mouth texture with the use of ground cashews.
In our drives through the Willamette valley, we pass many hazelnut farms and bought some of the yummy nuts to eat. It is also impressive to learn that 99% of the U.S. hazelnut crop is produced in the Willamette Valley of Oregon. So we decided to make our Singapore X Portland version of Cashew X Oregon Hazelnut Cookie.
